Aromatic pork chops
January 2005
There are thousands of different ways to marinate and aromatise pork meat. This is a quick and reasonably cheap one. I love to accompany them with potato puree and green, steamed or boiled vegetables (ruby chard for instance or spinach).
What you need (for 2 people):
2 chops (approx 170 gr. each) 1 clove of garlic 1 piece of ginger juice of ½ lemon 1 teaspoon honey 3 or 4 cloves 4 bay leaves ½ teaspoon dried basil olive oil Salt and pepper to taste
How you do it:
In a mortar, reduce to a creamy texture the marinade ingredients, in this order: cloves, pepper, ginger, garlic, lemon juice, honey, basil. Pour over the meat and leave aside for 4-12 hours. Bake the meat in a preheated oven (180-200 °C). Easy, isn’t it?
