What you need :
6 eggs
10 scarce spoon of sugar
500 gr. mascarpone
10 small cups of bitter espesso coffee
250 gr. savoiardi, or other sponge biscuits
1 bar of dark chocolate, grated
cocoa powder to garnish
How you do it:
Whisk the egg whites to a snowy consistence and put them in the fridge. Work the yolk being careful not to let lumps develop (shpudl this happen, try to beat them with a wooden spoon or even better with a whisk). Now add the mascarpone and work it well. Add part of the whites until the mix reaches a firm consistency.
Soak the biscuits in the coffee and lay them down in a deep flat-bottomed dish; cover them with a layer of mascarpone mix, a sprinkling of cocoa powder and a handful of dark chocolate shavings. Put another layer of biscuits, then the mascaprone, and the chocolate and repeat until you finish the ingredients.
Store in a fridge for at least 3-4 hours before you serve it. You may also freeze it, if you don’t eat it straight away, but I dare you to resist its deliciousness!!
